In my house pickles, chutney etc., are made from unripe mangoes and aam papad, jams is made from ripe mangoes.

Yes, I have seen foods that have gone spoiled. When a food spoils, it smells bad and its color also changes.


Why did Appa first choose the most riped mangoes to be used for making the mamidi tandra?

To make mamidi tandra, first, they bought a mat, casuarinas, poles, string made of coconut husk, some jaggery and sugar. In a sunny spot in the backyard, they made a high platform by using poles and mat. 

Then in a vessel, they extracted out pulp and juice from ripe mangoes and after adding jaggery and sugar in equal amount, they spread this pulp into a thin layer over the mat. The thin layer was left to dry in the sum. 

The process was repeated day after day until the layer grew four centimetres thick. Then after a few days, the layer was taken out and cut into pieces.


Different kinds of food items spoil due to different reasons. Some foods spoil soon, some stays good for long. List some reasons and conditions in which food spoils quickly.

(ii) If milk is not boiled properly.
(iii) If green vegetables are not kept in a cool place e.g. refrigerator.
(iv) If pickles, murabba etc., are not free from moisture.


Growth of thread-like structures along with the gradual spoilage of tomato can be observed when a cut tomato is kept aside for four days. Interpret the causes for this change.

Tomato contains a large amount of water and nutrient, which makes them more susceptible to spoilage by the action of various microorganisms like Salmonella. Once these pathogens get attached to the surface of a cut tomato, they start secreting polysaccharide fibres resulting in the formation of biofilm, which enhances their ability to survive even under unfavourable environmental conditions.

$$\bullet$$ The undesirable or disagreeable change in the state of food which makes it unsuitable for human and animal consumption is termed as food spoilage. Spoilage of food can be caused by various factors like: 
$$\bullet$$ Microorganisms: Growth of microorganisms like bacteria, fungi, etc. can lead to spoilage of food. 
$$\bullet$$ Action of enzymes: Enzymes which are an inherent part of the plant and animal tissue begin the decomposition process after the death of plant or animal. For example, a banana starts to ripen and then spoil if it is not consumed on time. 
$$\bullet$$ Infestation by insects: Insects like cockroaches may infest the foodstuff and make them unsuitable for consumption. There is possibility of transmission of pathogens from these insects. 
$$\bullet$$ Wrong handling of products may also result in the spoilage of foodstuffs. 
$$\bullet$$ Overcooking is another such reason for spoilage of foods. 


Wheat dough if left in the open, after a few days, starts to emit a foul smell and becomes unfit for use. Give reason.

I will carry those food items which would not get spoiled within two or three days like biscuits, chips, fruits, dry fruits, sattu, chiwda, sweets like peda, ladu, murabba, etc, with me. I will keep these things in dry containers or packets. I will take roti or parathas, sabji, curd also. First I will consume roti or parathas, curd and sabji, because these can spoil soon. Then I will eat the rest.
